  • Blind Bake the Crust - Line the crust with parchment paper and fill with pie weights, dried beans or uncooked rice.

  • Bake for 10 minutes, then remove the parchment and weights and bake for another 5 minutes. Let cool slightly.

  • In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg.

  • Stir in the shredded cheese and crumbled bacon.

Tips for a Perfect Quiche

  • Blind bake the crust – This prevents a soggy bottom.

  • Use full-fat dairy – Heavy cream or half-and-half makes the filling extra rich.

  • Don’t overbake – The center should be just set; it will continue cooking as it cools.

Experiment with fillings – Try mushrooms, onions, peppers, or different cheeses!

Storage & Make-Ahead Tips

  • To store: Refrigerate leftovers in an airtight container for up to 4 days.

  • To reheat: Warm slices in a 300°F oven for 10 minutes or microwave in 30-second intervals.

  • To freeze: Wrap individual slices tightly in plastic wrap and freeze for up to 3 months. Thaw overnight in the fridge before reheating.

This Bacon & Cheese Quiche is a foolproof recipe that works for breakfast, brunch, or a light dinner. Serve it with a fresh salad, fruit, or a warm cup of coffee for the ultimate comfort meal.
